Since we went to the fair a couple of weeks ago Miss Maddy has been asking for “apples on the stick”. Of course I immediately knew she was talking about the caramel apples we had when we were at the fair.
What I can’t understand is how she’s not sick of apples yet. We’ve literally been having something to do with apples once a day for a couple of weeks now. If it’s not crock pot applesauce or crock pot apple butter with breakfast it’s been the crock pot caramel dip to have for snacking with apple slices.
Oh well, I guess I could have much bigger complaints of my three year old than she eats too many apples :o)
Here’s how I did this EXTREMELY easy at home:
- 14 ounce bag of soft, individually wrapped caramel candies
- 4 – 6 apples
- 2 Tablespoons of water
- wooden popsicle sticks (same amount as the number of apples you’re using)
Start by unwrapping all of the caramel candies and placing them into a small crock pot. I used my 1 1/2 quart crock pot that doesn’t have temperatures… you just plug it in. (I would start it out on low though if it did have temps to choose from)
Add the water and cover. Cook for 1 – 2 hours until all the caramel candies are melted. Make sure you’re stirring every 20 minutes or so too.
In the meantime wash the apples and dry them thoroughly. Make sure to remove the stems.
Do y’all remember when you were litle and twisted the stem off the apple and every turn of the stem was a letter in the alphabet (starting with A of course)? And then whatever letter you were saying when it broke off meant that was the first letter of the name of the boy you were gonna marry when you grew up.
Anywho… stick a wooden stick down the middle of the apple, not going all the way through the apple though, to serve as a handle.
Okay, my caramels were completely melted at the one hour and twenty minute mark. I unplugged the crock pot and using oven mitts, removed the crockery and placed it on a pot holder.
At this point make sure you’ve layed out a piece of parchment paper on the counter top so you’ll have somewhere to put the apples once you coat them in the caramel.
Pick up each apple by the handle you created with the wooden popsicle stick and dip it into the melted caramel. I had to use a spoon to kind of ladle the caramel all the way to the top of the apples and let it drip down. Just make sure you completely coat the apple (leaving just a little bit of the apple showing around the wooden popsicle stick).
Let the coated apples sit until the caramel has quit running and kind of set up.
I can’t say how long or how these can be stored for sure because these were immediately eaten. I’m guessing you could wrap them in cellaphane and they’d be good for at least a couple of days.
These were very sticky, but very good. They’re the perfect fall treat for the kiddos too. I wold definitely make these to give as favors at Maddy’s birthday party… which I may do :o)
