Peach Crisp

During this time of year there is something about the cold weather that makes me want to eat warm fruit. If there is a way I can figure out how to warm pretty much any fruit, I’ll try it. This crock pot peach crisp fits the bill perfectly. It’s simple to put together and makes the house smell so incredibly good while it’s cooking.   Here is how I do it:

  • 5 cups of sliced peaches (fresh, frozen or canned…. I’ve used them all)
  • 1 Tablespoon of flour
  • 1 teaspoon of cinnamon
  • 2 cups of a granola cereal (I use one that has nuts and raisins in it)
  • 4 Tablespoons of butter

Spray the inside of a 2 1/2 – 3 quart crock pot with non-stick cooking spray. In a medium sized bowl mix the peaches, flour and cinnamon. Pour this mixture into the crock pot and make as even a layer as possible. Now evenly distribute the granola cereal over the top. Place the butter in small amounts over the top of the granola until you’ve used it all and distributed it as evenly as possible. Cook on low for 4 – 5 hours. This is best served warm with ice cream.
