Jodi’s Crock Pot Kalua Pig (a.k.a Luau Pig)

This is how Jodi does her pork butt roasts (just wait and see…. you’re gonna love this!):
Jodi says:I found this recipe to be very easy and tasty. We Had a luau & couldn’t use an Imu (an in ground oven) & we couldn’t afford a pig roast either. This was perfect for our party. We doubled the recipe and had nothing left except a small bone.

– 5-6 pound PORK BUTT TRIMMED OF ALL FAT
RUB WITH 2 TSP KOSHER SALT
RUB WITH 2 TSP LIQUID SMOKE
PUT INTO CROCK POT.  (NOT SURE WHAT SIZE IT IS JUST SO THAT THE ROAST FITS WITHOUT TOUCHING THE SIDES AND BEWARE LOTS OF JUICES, MINE OVERFLOWED  INTO THE BASE.
TOP THE ROAST WITH 5-6 WHOLE UNPEELED BANANAS (I SCORED MY BANANA’S ONCE WITH A KNIFE LENGTHWISE.)
COVER TIGHTLY WITH FOIL AND REPLACE THE LID. (KEEP ALL STEAM IN)
COOK ON LOW FOR 16-20 HOURS.
THIS WILL FALL APART AND MELT IN YOUR MOUTH.

I am suprised this recipe was not already on the site. Please share with everyone. I will always fix my pork roast just like this. never knew I could cook!!!!!

*My note* I would guess that it would be ok to put the crock pot on a cookie sheet or fit it in a baking pan (if you have one large enough) to catch the juices that overflow. It might cut down on the messy clean up if you also put a towel underneath the pan before placing the crock pot in it…. just make sure it is stable once you place the crock pot in the pan. If anyone tries this (before I do that is), please post a comment here to let us know your love of it.
