When I was at the grocery store the other day they had bananas on sale for $0.39/ lb. Being the person I am, I couldn’t pass up on a sale (It’s not healthy, I know). So needless to say I ended up with a few extra bananas that I needed to do something with. Then I remembered seeing a crock pot bananas foster recipe somewhere and thought I’d give it a try. Lawdy, Lawdy…… was it good! This is one of those recipes that would be perfect to start in the crock pot at the beginning of dinner (and would impress any guests that you might have).
Here is how I created it:
-1/2 cup unsalted butter- 6 bananas, sliced about 1 inch thick-1/4 cup packed brown sugar (light or dark would work)-1/4 cup of rum OR 1 teaspoon of rum extract (if the kiddos will be eatin’ it)-2 to 3 cups of vanilla ice cream
In a two quart slow cooker, melt the butter on low. After the butter is completely melted, add the brown sugar and rum (or rum extract). Stir to incorporate. Add the bananas and stir to coat, but try not to break up the bananas. Cook on LOW for 1 hour. Scoop 1/2 cup of ice cream in bowls and serve bananas foster over it. Mmmmm Mmmmm good!
