Crock Pot French Onion soup has to be one of the best slow cooked comfort foods of all times. Here is Barbee sharing her version of it.
¼ c. butter
3 cans of beef broth
1 Bay Leaf
3 onions, thinly sliced
1 c. red wine
1 sprig fresh thyme
1 t. sugar
1 c. water
1 French Baguette
1 T. flour
1 T. balsamic vinegar
sliced Swiss or gruyere cheese
½ T. ground mustard
1 T. Worcestershire
2 cloves garlic, crushed
2 sprigs fresh parsley
Melt butter in saucepan. Stir in sugar. Add garlic and onions. Cook over medium heat for 10 minutes or until brown. Add ground mustard and flour – stir until well blended.
In the crock pot……add water, beef broth, wine and Worcestershire sauce. Add onion mixture and herbs. Cook all day in the crock pot on low (8-10 hours). When you are ready to toast the bread, take the herbs out of the crock pot and discard. Add the balsamic vinegar and season with salt and pepper. Stir to incorporate.
Slice the baguette into 1 inch slices and toast until browned.
Pour soup into individual bowls, layer baguette slices on cookie sheet and top with cheese. Broil until cheese is golden brown and place on top of soup in bowls. *NOTE* I would imagine that this would get cooked in a 4 – 6 quart crock pot.
