This is a smaller version of the original crock pot breakfast casserole. The original was intended for large family functions and so that it would feed at least 10 – 12 people. Since there are only 3 people in my household, this is the recipe that works for us. It gives us a great breakfast plus Miss Maddy and I can usually eat breakfast a couple of more days with the leftovers.
Crock Pot Breakfast Casserole
- You can use frozen hashbrown potatoes in place of the bag of fresh diced potatoes.
- A five ounce can of evaporated milk is equal to 2/3 cup of evaporated milk.
- Feel free to use whatever kind of cheese your family likes or what you have on hand.
- If your crock pot doesn’t run hot I would recommend cooking this on the low setting instead of the warm setting through the night.
