Broccoli and Cheese Stuffed Twice Baked Potatoes

When I had made a couple of extra baked potatoes in the crock pot the other day I wondered what I was going to do with them. I used one to make some homefries for breakfast but still had two left.
After I racked my brain and looked through the freezer and pantry I decided crock pot twice baked broccoli and cheese stuffed baked potatoes was the answer. Boy, am I glad I decided that. These were phenomenally great (Like “slap yo mama” great)! 

Here is how I did it:

  • 2 baked potatoes, cut in half and insides removed and reserved leaving a bowl shape
  • 1 cup of cooked broccoli, mashed with back of fork to break up
  • 1/2 cup of sour cream
  • 3/4 – 1 cup of cheese
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon salt

In a medium bowl mix the broccoli, potatoes, sour cream, pepper, salt and 1/2 cup of cheese til a smooth consistency.

Your going to spoon that mixture into the hollowed out potato skins.


Stack the potatoes LOOSELY on top of one another in a crock pot (I used my 2 1/2 qt, but you could use a larger one and not stack them at all).


Cook on low for 2 – 3 hours. The last 15 minutes of cooking sprinkle the remaining cheese on top of the potatoes and place lid back on. This will nicely melt the cheese.


Serve and enjoy!
