Gluten Free Slow Cooker Ham and Cabbage Soup

I have to admit that there is nothing more comforting to me than a good hearty bowl of slow cooked soup on a cold winter day. When Carol, the admin at Easy to be Gluten Free, submitted this crock pot ham and cabbage soup I was SO excited. This is going to be a great addition to my crock pot soup recipes.   Here is how she does it:   3 medium potatoes, peeled and cut into small (about ½”) chunks
3 medium carrots, peeled and diced
1-1½ lbs lean cooked ham, cut into small chunks
1 medium onion, diced
1 small head cabbage, chopped into small pieces
4 cups chicken broth or 4 cups water and 4 chicken bouillon cubes (Herb Ox is GF)
½ teaspoon salt
¼ teaspoon pepper
3 tablespoons cornstarch
¼ cup water   Place all ingredients except cornstarch and ¼ cup water in a 4-5 quart slow cooker.  Cook on low 8-9 hours or on high 4-5 hours. Just before serving, combine cornstarch with ¼ cup water until smooth.  Stir into soup.  Cover and cook on high for 15 minutes or until soup is thickened.   1. I love making different soups! I have printed this one and plan on making it soon. I have a batch of my “homemade” soup in the refer right now but when that’s gone I plan to try this one. Thank you. I like to try new recipes to get away from the “boring”.
